Ask why a food facility floor failed and the answer is almost never "the coating was bad." It's "the drain leaked," "water pooled," or "it cracked at the cove." The field of a floor is the easy part. The three details that actually decide whether a food floor lasts — and passes inspection — are the ones most specifications barely mention. Here they are, in full.

The short version: floor drains, slope-to-drain, and sanitary cove base are where food floors fail first and where inspectors look hardest. A perfect coating with bad detailing still fails. Get these three right and the floor lasts; get them wrong and nothing else matters.

Detail 1: Floor drains

Drains are the highest-risk point on a food facility floor. They're where water concentrates, where the coating terminates, and where a bad termination lets moisture under the floor — the start of most failures.

What good drain detailing requires:

  • Correct termination. The floor coating has to terminate into the drain properly, sealed, with no gap for water to track beneath it.
  • The right drain type. Point drains, trench drains, and slot drains each suit different layouts and flow volumes. Wash-down-heavy areas usually need trench or slot drains for capacity.
  • Compatible materials. The drain and the floor system have to work together at the transition — a mismatch cracks and leaks.
  • Accessibility for cleaning. A drain that can't be cleaned becomes a contamination source.

Detail 2: Slope-to-drain

A flat food floor is a failed food floor. Standing water is a slip hazard, a sanitation problem, and a way to concentrate chemical attack on the coating. The floor has to be sloped so liquid moves to the drains and nothing pools.

  • Adequate fall. The floor needs enough slope toward drains that water actually moves — typically expressed as a fall per foot toward drains; the right amount depends on the area and flow.
  • Slope built into the system. Where the existing slab is flat or wrong, slope can be built with the floor system or a screed — it shouldn't be left to chance.
  • No dead spots. Corners, equipment bases, and wall edges are where water hides; the slope plan has to reach them.

Pooled water is the most common visible sign of a floor that wasn't detailed for drainage.

Detail 3: Sanitary cove base

Where the floor meets the wall, a square joint is a bacterial harborage point and a place cleaning can't reach. Sanitary coved base carries the floor up the wall in a continuous, sealed curve, eliminating the joint.

  • Integral cove. The cove is part of the seamless system, not a separate trim that can lift.
  • Adequate height. Coving runs up the wall enough to protect the wall-floor junction from wash-down.
  • Around everything. Coving belongs around equipment plinths and penetrations too — anywhere the floor meets a vertical surface.

Coved base is what makes a seamless resinous floor genuinely sanitary and cleanable to food-safety standards — and it's exactly what inspectors check.

Why these three get left out

They're labor and skill, not product. A quote can look cheaper by under-detailing the drains, skipping proper slope, and minimizing coving — and the difference doesn't show until the floor fails or the inspector arrives.
